SARA LYNN’S MEDITERRANEAN QUINOA BOWL RECIPE

INGREDIENTS:

1 clove garlic, minced

¼ cup quinoa

½ cup vegetable broth

¼ cup roasted red pepper, chopped

¼ cup marinated artichoke hearts, chopped

1 handful baby spinach

1 tbsp kalamata olives, chopped

2 tsp olive oil

½ lemon, juiced

¼ tsp Greek seasoning (Recipe here: http://bit.ly/1gtwEGv)

1 tbsp feta

fresh parsley

In a small saucepan, combine vegetable broth, quinoa and garlic and bring to a boil.

Reduce heat to low, cover and simmer for 15 minutes. Remove from heat and set aside for 5 minutes.

In a large bowl, combine quinoa, peppers, artichoke hearts, spinach, olives and feta.

Top with olive oil, lemon juice, Greek seasoning and fresh parsley. Stir to combine.
